baked maple apple overnight oats – vegan

Place the muesli and almond milk in a bowl and leave to soak overnight or if you’re in a rush for a couple of hours to really soften into an overnight oats texture. If you’re in a rush and like things crunchier you can soak for just 20 minutes.

When soaked, preheat the oven to 180C / 160 fan. Line a baking tray with greaseproof paper.

In a small bowl mix the maple syrup, coconut oil, vanilla and optional cinnamon.

Slice the apple into rounds about 3 mm thick. We used a mandoline to get nice even slices. Place on your lined baking tray and toss with the maple mix. Bake for 25 – 30 minutes until golden.

Remove the apples from the oven and allow to cool. You can make the apples the night before too if you prefer.

When ready, option to stir through some coconut yoghurt through the oats for extra creaminess and top with baked maple apples and optional crunchy muesli and coconut yoghurt.

1 sweet apple like Braeburn, Gala or Pink Lady

1 – 1.5 tbsp maple syrup

1/2 tbsp coconut oil, melted

1/4 tsp vanilla extract

 

Overnight Muesli Oats

2 cups dorset cereals organic muesli

2 cups Plenish almond milk

(optional 1/4 tsp cinnamon)

(optional 2 tbsp coconut yoghurt)

2 tbsp coconut yoghurt (optional)
